Ishikawa Prefecture, with its huge harvest of fish that is particularly tasty within Japan, is especially used for sushi. The prefecture is famous as a battleground for the dish, having the second-largest number of sushi shops in the country. From kaiten sushi shops (sushi served on conveyor belt) to the high-class restaurants, fresh fish in season can be eaten lavishly as sushi.
