Nodoguro, which is a white fish harvested in the harbors of Wajima, Noto and Kanazawa, has a moderate fattiness and an excellent flavor. It is a popular top-class fish. At its optimum taste from autumn to winter, there are many ways to have it including as sashimi, grilled or stewed.
