Snow crabs that come into season annually on November 6th are a famous winter delicacy in Ishikawa Prefecture. These crabs raised in the plankton-rich seas have firm meat that has a sweetness and good texture. They are only harvested from November to March. Grilled, boiled or as sushi, the crabs are available in a variety of dishes.
