Masuzushi is a traditional sushi of Toyama Prefecture which is a type of oshizushi (pressed sushi) in which salt-pickled and flavored trout is thinly sliced and placed carefully on the rice. Cited in ancient Heian Era literature, masuzushi has had a history of being offered as gifts during the Edo Era.
