Tarai udon had its origins in the Edo Era when local woodcutters boiled udon in a pot and then surrounded the noodles in a washbasin to eat them. You can still eat this udon which has incorporated eggs so that it goes down smoothly in a washbasin overflowing with rustic beauty.
