Kanpyo (Dried Gourd)

Commonly used as an ingredient in rolled sushi and miso soup, this is a preserved food that has continued to be eaten since ancient times                 

Calabash, a member of the gourd family, is peeled into strips and is dried in the midsummer sun to make this preserved food, kanpyo. It is rich in nutrients and fiber. It has a plain flavor so it is highly prized in a variety of dishes such as rolled sushi in which the kanpyo is sweetened and stewed or soups.
