Mutsugoro (mudskipper), that unusual fish living on the wide mud flats of the Ariake Sea, is grilled with a sweet-and-spicy sauce

The mudskipper is an amphibious fish rare in Japan which lives on the mud flats of the Ariake Sea. Grilled whole, it is covered in a sauce made from soy sauce, sugar and sweet rice wine. It has a smoky flavor with plenty of fat. The best time to eat it is between May and August.
