Soy milk is heated with the skin formed on the top layer carefully gathered up and created into yuba which is a high-class ingredient in vegetarian cuisine and kaiseki ryori. Can be eaten in stews and as sashimi.

Healthy Japanese cuisine
Yuba is healthy food. You have never tried this probably, but it is so good. You can enjoy hot and cold. There are many yuba restaurants in Kyoto.
