Jibuni

A regional dish bringing together the tastiness of duck in a thick soup symbolizing Kanazawa

Jibuni is a traditional dish that has continued from the Edo Era. In a broth containing soy sauce and sugar, duck (or chicken) is stewed with thin sheets of the local product of wheat gluten, shiitake mushrooms and greens. The broth and the meat coated with flour provide a mellow taste.
