Since the lifting of the ban by a prime minister 120 years previously, the city of Shimonoseki has proudly been the place for the pufferfish. The top-class breed, tiger pufferfish, is splendid for its beautiful white meat and resilient texture. Fuku can be eaten through a variety of dishes such as sashimi, karaage and hot pot.
