Wakayama Ramen

Rich but mild, this is a traditional ramen born from postwar yatai carts.

This is light-tasting ramen but with some depth whose soup combines soy sauce with the stock of pork and chicken bones. The local way of having it is a unique Wakayama custom which involves eating it with mackerel sushi known as “hayazushi”. Therefore, the amount of ramen served is relatively small. Simply help yourself to the sushi placed on the table and then tell the cashier how many pieces you had when paying the bill.
