Nigirizushi which is considered to be sushi generally speaking is a local dish whose history began in Edo (the old name for Tokyo). Genuine Edomae zushi uses fresh fish harvested from Tokyo Bay and is formed by sushi chefs. There are famous restaurants in the older areas of the city such as Tsukiji and Nihonbashi.
