Using the water from Izuruhara Benten Pond, one of Japan’s Top 100 Famous Waters, the handmade noodles are rolled out with a thick bamboo stalk which create their distinctive smoothness with a firm bite. The clear soy sauce-based soup goes well with the fine noodles.
