Itokiri mochi is a traditional sweet that has smooth bean paste wrapped in narrow mochi rice cake and then cut by string. The confection had its origins in the 13th century when in celebration for the repulsion of the Mongol invasion, the blue and red regimental colors of the Mongols were painted onto rice cakes and offered in front of the gods.
