Funazushi, which was once served as a dish of hospitality during the Nara Era, is a fermented food in which funa (crucian carp) from Lake Biwa is placed on rice and then pickled in salt. Its particularly strong aroma and taste due to lactic fermentation is admired for how well the dish goes with sake.
