The marbled sole which is raised in brackish waters fed by fresh water from the bottom of the sea has a tender flesh without any muddy smell, and has been prized as a top-class fish since the Edo Era. Since the fish is harvested in the ocean directly below the ruins of Hide Castle, it has been dubbed “Shiroshita Sole” with the first word meaning “below the castle”.
