Slices of mackerel, salmon, sea bream and other fish are placed on top of fairly small amounts of vinegared rice and wrapped in persimmon leaves to form kakinoha zushi. With a gentle flavor, peeling back the leaves to eat the sushi releases the wafting smell of the leaves to further enhance its fine taste.
