The soba culture of Izushi was born in the Edo Era in which it is said that the lord of Izushi brought soba chefs from the Shinshu district that was famous for the dish. The characteristic of eating Izushi soba is by separating the noodles onto small dishes with various seasonings served such as green onions, wasabi, grated radish and eggs.
