This is a noodle dish that was born in the port town of Yawatahama where overseas trade has been common since ancient times. In a light soup made from chicken bones, bonito and konbu seaweed, vegetables, pork, special kamaboko (fish cake) and other ingredients are generously added to create Yawatahama chanpon.
